      A quality control analyst is a scientist who tests manufactured products for consistency.
      So, for example, in the pharmaceutical industry (where I work), the manufacturing side makes batches of a drug following a recipe that has been tried, tested and approved. A sub-sample (small amount) of this is sent to the quality control labs where it is tested to make sure the correct ingredients were used and that the drug is the correct dosage and that it behaves as it should (dissolves in the right time frame).
      Only when testing is completed can that batch of drugs be released for patients to take.
      In other industries, quality control might test ingredients or the quality of cooking (food manufacturing), how well a fabric dyes or the stitch quality (clothing production).
